Today I am going to be baking some “Vegetarian Sushi” for the family to try. I am using lettuce leaves to wrap some rice and mixed vegetables in which I will flavour with spices and[amazon_textlink asin=’B001JTBDM0′ text=’ soy sauce’ template=’ProductLink’ store=’wwwlovetobake-21′ marketplace=’UK’ link_id=’cf4c0b6e-51bf-11e7-86d7-ad03d10e9462′]. I have some carrots, green beans, mini corns already prepped. I am using these vegetables as these are what all my children like the most. I am cooking these ingredients later  and whilst the rice and vegetables are cooking I will steam the lettuce leaves. I want to soften the lettuce leaves slightly to make them  easier to roll up.  I have seen a few recipes on line where they have used collard leaves (from the cabbage family) but I am going to use lettuce – trying something different and using what I have in the fridge.  I have never made sushi before so this is a new one for me too. As my family are all meat eaters except for myself, I am going to add meat to the dinner in the form of  homemade meatballs which the children can make later. Strange dinner I know but sometimes the best meals are the strangest concoction

Also, my daughter informed me that yesterday she made stir fry in food technology and she had to try it – so now she likes noodles and [amazon_textlink asin=’B00MWTTPE4′ text=’beansprouts’ template=’ProductLink’ store=’wwwlovetobake-21′ marketplace=’UK’ link_id=’059ee72d-51c0-11e7-852e-01a8521acf3b’]. All those times when I make something for dinner and one child or another has turned their nose up at it but when they try something at school and suddenly like it – I am amazed but slightly saddened at the same time. Does anyone else find this is the case in their household too?

When I make something different for dinner I sit at the dinner table explaining what the meal contains and how the child who is turning their nose up at it how much they like it on its own, for example, carrots. Tonight’s meal will involve a lot of explaining as the whole family like all the ingredients but not made as sushi rolls- my eldest was shocked thinking I would be making something with raw fish so when I explained to her what I was planning she seemed a bit happier. We were talking about this idea last night when we saw something on the television which both my husband and daughter seemed excited about- Homemade Kebab. When I assured them I could make it for them it got me thinking what I would need to buy. I also bought some Hershey Kisses which I am going to use to decorate a cake for my husband on Father’s Day, this weekend.  It will probably be a chocolate cake as that is his favourite cake (at the moment) but I am not sure what I am going to use as a filling. I am really quite excited for the weekend as I have some interesting presents for him – because he is worth it. I want him to know how much I appreciate him allowing  me to stay at home and do something I want to do – writing, baking and creating recipes, recipe book, blogging and photography. All things I am really passionate about and  enjoy doing which fit around my children. There is something to be said for being able to work from home and I wouldn’t have it any other way.

Today is “Beer Britain Day”, I have an idea in my head to make a Malt Loaf  using [amazon_textlink asin=’B0050L9IGQ’ text=’Newcastle Brown Ale’ template=’ProductLink’ store=’wwwlovetobake-21′ marketplace=’UK’ link_id=’357d3ccf-51c0-11e7-8104-61ff5c16eb8d’] in the recipe. I will get back to you on this one as I have been soaking the dried fruit in the beer overnight as I want to be able to taste the beer in the loaf and letting the fruit plump up as they absorb the beer is the best way.

This week has been a rather lazy week in the kitchen as I haven’t had a lot of time free to be in there due to my time being used elsewhere  but I will make the effort to bake and take photos before the family demolish anything over the next few days. Behind the scenes, my days have been hectic with researching ideas for new recipes, lying awake at night with ideas floating around in my head, working on articles etc. Also, I have stuck to my guns and made sure that I am finished with my work before I do the school run so that the children have reaped the benefits and had my undivided attention after school.
