It is such a gorgeous day today that I am baking some lovely, summery Mini Sandwich Cakes – vanilla sponge filled with a cream and crème fraîche mix and strawberries glazed in jam. I am using strawberries in the recipe before the children eat them all and glazing them in jam to prevent the strawberries from drying out. I can’t wait for them to bake and decorate them just so I can try one. The anticipation is killing me. As well as baking these cakes, I am making a Vegetable Curry in the slow cooker. Even though I am in the house all day, it feels nice to know that the dinner is already prepared for tonight and it saves me a job later. This curry is a change from normal in that I don’t usually make it in the slow cooker and I am using Quinoa in the recipe instead of rice. I have been wanting to cook with quinoa for a while so this is a whole new thing for me. I made a [amazon_textlink asin=’B0050B8P24′ text=’quinoa’ template=’ProductLink’ store=’wwwlovetobake-21′ marketplace=’UK’ link_id=’3f2b48dd-3bb5-11e7-ae64-4d0ab1a3fcb4′] salad a couple of days ago and the family seemed to enjoy it so I am cooking with it again. If it works which I think it will I am sure it will be a hit. The quinoa will soak up all the flavours from the curry, vegetables, herbs and spices which I have added to the slow cooker. I am even thinking of baking some Naan Breads to go with the curry , which I have never made before. I may have to go and look for some recipe ideas a bit later.
Now I am thinking I have made a big mistake by making a curry today as it is so lovely outside, maybe a salad would have been a better idea. Ah well too late now. I will be adding more about these ideas later when they are finished.

Also there is an open tub of glace cherriés just crying out to be used in something this weekend. I can’t decide on that one either. Ohhhh decisions, decisions.

I think I may need to look into a food photography course of some description or just buy the camera, bake and take lots of photos till I get it right. Practice makes perfect so they say.
