Well how do I describe this Raspberry Tart which I baked last week. The pastry was thin and baked perfectly – a slight crunch which added texture to the tart. The creme patisserie was sweet and seductively smooth with a distinct hint of vanilla. It complimented the tangy raspberries and dark chocolate topping to a tee. I had a slice with a cup of tea and it went down a treat.

Raspberry Tart Slice

Nutritionally,  one slice of this tart contains:

  • Calories 307.9
  • Total Fat 15.6 g
  • Saturated Fat 9.1 g
  • Polyunsaturated Fat 0.8 g
  • Monounsaturated Fat 4.5 g
  • Cholesterol 103.5 mg
  • Sodium 64.6 mg
  • Potassium 34.8 mg
  • Total Carbohydrate 36.9 g
  • Dietary Fibre 1.2 g
  • Sugars 15.8 g
  • Protein 4.2 g

– quite a lot of calories, sugars and fat but there are three egg yolks in the recipe and it is a dessert so these nutrients will be high. Although there is not that much sugar in the recipe there will be sugars from the raspberries and from the icing sugar used in the pastry.

I love recipes which have several parts to them – the first part being baking a pastry base and then the cooked filling and fresh topping. In fact, it has put me in the mood to make a variation on the standard Key Lime Pie as I have a few limes which need using up so that is an idea to try this week. Watch this space for more details.

I have made a video of the Raspberry Tart method which I have added to my Youtube channel. So if you feel like having a quick reminder or want to watch how to complete the tart then feel free to have a look. I have added it below so you can watch it too. It would be great if you could subscribe to my Youtube channel and watch the other videos which I have made to date so far.

Well after a fabulous weekend away it is back to the grindstone or rather laptop as I have a few jobs I want to do on the blog and some changes to make. I am not in the mood to get back in the kitchen as it is far to warm to be baking today so I may have to try later in the day to hide in the kitchen to try and do some work in there. I have spent the morning keeping myself busy in the garden and house so that I could spend some time thinking about what I am going to bake this week.

On the Foodie Calendar, there is “Eat What You Want Day” so I am going to share one of my dinners this week – although at the moment all I want to eat in this heat is icecream or a simple sandwich :). There is a “National Foodies Day”, “National Liver & Onions Day” (yuck) and a “National Nutty Fudge Day” (yum) to name but a few in the week ahead. I will be making some Fudge this week as a treat for the family and maybe it will be a Friday Treat on my Facebook soon.
