Before I head off to enjoy the “Bonfire Night” treats in my house I wanted to share the recipe for the Chocolate Gingerbread which I made up this morning. Normally, my children will struggle with traditional gingerbread which has black treacle included in it so I tend to remove the treacle but this morning I decided to make some gingerbread with a twist that the children seem to like.
Chocolate Gingerbread Recipe.

Ingredients
75g black treacle
75g golden syrup
160g soft spread
100g dark brown sugar
100g caster sugar
4 eggs
120g plain flour
1tsp baking powder
2tsp ground ginger
1tsp mixed spice
80g cocoa
100g chocolate chips
icing sugar for dusting
Directions
- Preheat the oven to Gas 4.
- Line a baking tray.
- In a pan, weigh out the sugar, syrup, treacle and soft spread and heat to melt the soft spread. Stir constantly.
- Remove from the and add the eggs.
- Beat the mixture before adding the flour, spices, cocoa and baking powder.
- Transfer to the tray and sprinkle the chocolate chips over the top.
- Bake till the mix is set on the top.
- Remove from the oven and allow to cool.
- Dust with the icing sugar and slice into 16 even sized pieces.
Notes
- Nutritionally, one slice contains 234 calories, 11.5g total fat (15% daily total fat), 32.1g total carbohydrate (12% daily total carbohydrate), 1.9g fibre (7% daily fibre) (based on a 2000 calorie diet).
I based this recipe on my brownie recipe but changed a few parts of it. The final bake had a consistency of brownies and looked like brownies but when you bite into it you get a hit of ginger and spices followed by the warmth of the treacle and a liquorice kick but when combined the cocoa and chocolate chips it is yummy. I added the treacle to the recipe as I love black treacle and don’t use it enough in my baking. This traybake will be a welcome addition to the table tonight after a feast of hotdogs, chips and lots of yummy snacks. Also I have made some Vegetable Broth in the slow cooker which I will be serving with dumplings. I can’t wait and I will share some photos later.
