Lots to share with you starting with my latest book offer which is now at £2.99 for the next 18 hours before another £1.00 is added. So go and grab a bargain whilst you can. Personally, I have ordered a copy of the paperback as I really want to have a real copy of the book to show to people when I am talking about what I have done to date.  I still need to buy the paperbacks of the last three books i.e., Summer Picnics, Halloween Recipes and Christmas Recipes too. Bit behind with that at the moment.

Also, I have added the video of my Marzipan and Sweet Mincemeat Muffins recipe to my Youtube channel. I have tried to be a bit more adventurous with the style in this video, weighed out the ingredients before hand, altered the lighting, edited it a bit more and I was quite happy with the results. I still need to invest in the fancy lighting but I am quite pleased with my husband’s musical abilities so far. He may run out of tunes before I run out of videos though.

I am having a “thinking day” today, trying to work out what to change on my webshop, what to add and where I want to take the webshop idea. Making plans and not sleeping means I am starting to flag a bit now. I am going to have another cup of coffee to keep me awake and crack on. Trying to hit the nail on the head and get this business moving in the right direction is such hard work. I am thinking I need to head to a business adviser as I am feeling a bit swamped with everything.

A bit of research is needed as there must be help out there somewhere for me but as of yet I haven’t found it. The questions I am asking myself are:

  • what do people want to be buy online.
  • what can I do that others haven’t
  • how do I market to the local community that I am a homebaker who can offer collection/local delivery
  • would I be better off finding a job to use my skills

This sounds so depressing but I am not feeling down in the dumps just struggling for which direction to steer my business. What suits me and my family and how can I do it – that’s what I need to know. Anyway, enough about the deep thinking back to the baking and recipe writing.

Today, I am sharing my Double Chocolate Chip Muffins recipe which my daughter made yesterday for breakfast. This recipe is based on my standard muffin recipe but I changed it a bit.

A Double Chocolate Chip Muffin Recipe.

Great as a weekend treat for the family 🙂

Ingredients

  • 9oz self raising flour

  • 1tsp baking powder

  • 2oz cocoa

  • 2oz soft margarine

  • 3oz caster sugar

  • 4oz chocolate chips

  • 2 eggs

  • 8 floz milk

Directions

  • Preheat the oven to Gas 6.
  • Prepare 2 x 6 holed muffin trays.
  • In a mixing bowl, weigh out the ingredients and mix with a wooden spoon quite roughly. (it doesn’t matter if there are still lumps of margarine or flour).
  • Scoop into the tins.
  • Bake for 20 minutes till well risen and firm to the touch.
  • Allow to cool before removing from the tins.

Notes

  • Nutritionally, one muffin contains 220 calories, 8.5g total fat (11% daily total fat), 32.8g total carbohydrate (12% daily total carbohydrate), 2.3g fibre (8% daily fibre) (based on a 2000 calorie diet).

This muffin recipe is so versatile that I have made Berry Muffins, Cherry & White Chocolate Muffins, Nutella Muffins and so on. The sugar content is not too high and you could reduce it further by using banana in the recipe.

The calories are quite high per muffin but they are Double Chocolate Muffins. The sugar and carbohydrate content are not too bad but there are chocolate chips as well as sugar in the recipe. The fat content is slightly high but the soft margarine and chocolate both contain fat. Unless the chocolate chips are removed to reduce these levels I am sure you could live with eating one of these muffins. If you have the willpower to eat just one!!
