As normal everyday life gets in the way so my plans for today have changed. I have decided to redecorate some parts of the house and this morning I started on the smallest room – the front porch. While painting the gloss on the door frame and skirting boards I realised that there was no way I could start making cookies and cheesecake as the smell of gloss is overpowering (but I do like the smell) – weird I know. I think as I sit in the house most days I can see what needs doing so I just bit the bullet and went for it. The doors and windows are open to try and get rid of some of the smell before anyone else gets home. However, I am intending to bake later this evening if the smell disappears as I really want to paint some more tomorrow.
Back to my main passion in life, baking. When I told my children what I was going to bake today there were a lot of “ooohhhs” so I think they are looking forward to a Cheesecake. I made some Oreo Cookies last night and they seemed to go down well with the family as there were none left this morning. After trying the recipe the flavours are great but I am not happy with the texture but the children seemed very happy with them. I want the texture to be crunchier so I was busy thinking about how to change the recipe to make the cookies crunchier as I was painting. Great thinking time available when painting. This is a picture of the first Oreo Cookies which I made yesterday.
I am going to try the cookies again but with less egg in the recipe or maybe replace the egg with a smaller quantity of milk. I am going to lower the temperature and bake the cookies for longer to see if this makes them crunchier. If all else fails I do have an alternative recipe in mind which produces very crunchy Ginger Snaps but I will have to mess around with the ingredients to achieve Oreo Cookies- i.e., remove the ginger and other spices and add cocoa into the mix instead. Actually, thinking about it this may be easier – so a complete change of heart now. Still making Oreo Cookies but with a completely different recipe. I am rather keen to go and try this recipe now but I will have to wait a bit longer. I will be sharing the recipes tomorrow.
On a savoury note, I made my Vegetarian Sushi last week but I didn’t manage to catch a photo of them before the children devoured the lot. I am going to make them again but use collard leaves instead. I am sure I have already said this?? Anyway next time I make them I am going to cover them in breadcrumbs and bake them in the oven so that they have a crunchy outside rather like a croquette. The inside will still be a vegetarian fried rice surrounded by a collard leaf and a golden breadcrumb exterior.
