Well the cookies I made yesterday were a great hit. My daughter ended up making them for me whilst I got on with other jobs that needed to be done. I gave her the choice of sweets to add to the cookies – Rolos, M&Ms and chocolate buttons. When I came in from the garden she had used all three bags of sweets. Although I am not sure how much ended up in her mouth and how many went in the cookie dough. She had divide the dough into three bowls before adding the sweets. Very organised indeed and they were already on the trays ready for the oven by the time I had caught her. There was no point in telling her off and I was quite impressed with her ingenuity. I was intrigued with how the cookies containing the whole Rolos would bake in the cookie dough. Not too bad for my daughter’s first attempt at making these cookies unsupervised.
Whilst the cookies were in the oven the caramel in the Rolos seeped out of the Rolos which were nearest the edges of the cookie. The caramel didn’t burn though as the cookies did not take long to bake. The cookies were just out of the oven as my husband walked in the door and he was the first to try one – Rolos are his favourite sweet. The M&M cookies were just fine as were the chocolate button ones. I have made these cookies before but with a different recipe.
All the children wanted to try one so before their dinner they had one each but after dinner they helped themselves to more and so the cookie jar is almost empty again. My children are like vultures when they like something that is homemade. I have added this recipe before to my blog and it is on my recipe page as Oatmeal Cookies. I don’t think I have added a Rolo Cookies recipe though, even though I have used them in cookie recipes before. With these cookies the unhealthy part is the Rolo and the healthier part is the porridge oats. A brilliant combination and the cookie dough manages to keep most of the Rolo in tact as long as it is not too near the edge of the dough.
“Rolo” Cookies Recipe

Ingredients
5oz self raising flour
5oz porridge oats
pinch of salt
3oz soft spread
3oz caster sugar
3tbsp milk
1 bag of dark Rolos
Directions
- Preheat the oven to Gas 4.
- Line two baking trays.
- In a mixing bowl, weigh out all the ingredients except for the milk.
- Rub the soft spread into the other ingredients.
- Add the milk to form a soft dough.
- Add the Rolos evenly into the dough.
- Roll the dough into balls onto the trays.
- Press down slightly with your wet fingers.
- Bake for 10 – 15 minutes till turning golden brown.
- Allow to cool before removing from tray.

- Nutritionally, one cookie contains 205 calories, 8g total fat (10% daily total fat), 29.7g total carbohydrate (11% daily total carbohydrate), 1.8g fibre (6% daily fibre) (based on a 2000 calorie diet).
Considering the children have managed to eat the whole batch of cookies with some help from my husband I am interested in the nutritional information for these cookies. I have added the information (per cookie) for you to read through at your leisure and deduce from it what you will. Obviously, a lot of the fat and sugar comes from the Rolos, but it is present in the flour and oatmeal too, so I don’t think it is too bad. There is some fibre in the cookie which is a good thing and the calorie content is quite reasonable.
Today has been the dreaded trip to the supermarket but it all went to plan an I managed to stay within budget. I don’t know how though. Now, I am sat with my headphones on, music blasting in my ears to block out the sound of the children as they are playing on the Wii. I am trying to get some writing done before tea as I don’t want another late night like I had last night. The problem was I couldn’t sleep when I went to bed after doing some work on my book. Fingers crossed I get finished earlier tonight as I have a busy day tomorrow.
