Well, first things first, my first ever book, which has the information which I followed to set my own homebaking business all them years ago, is now on offer FOR ONE WEEK ONLY AT 99p. Some I have shared on here already and others I have shared ideas about how to change the recipes to suit different dietary requirements. This weekend I am focusing on my webshop bakes and packaging ideas. Still lots to do but plenty to get on with.

I know I could have bought them from a standard supermarket but I needed some other cake pieces and it was easier from Amazon Pantry. I already have [amazon_textlink asin=’B009F7C5PM’ text=’Stevia ‘ template=’ProductLink’ store=’wwwlovetobake-21′ marketplace=’UK’ link_id=’087fec17-9546-11e7-b886-8b3dbe56230a’]in my kitchen cupboard as I made a diabetic cake last week for a customer. I made a cake using half the amount of sugar and one with stevia in it and tried them both. I worked out the sugar content of each, had my husband try both and although I recorded some of the results I did not take any photos. The customer had ordered the cake made with sweetners as they knew what they liked and I had made one for them before. I will run this trial again to complete a more thorough test on the resultant bakes and then share the results with you.

For my webshop, I have made some really yummy and quite healthy Lemon Drizzle Flapjacks. These are nutritionally quite good as the sugars are really low which is great for a diabetic diet. Also, the presence of the oats makes the flapjack have a low GI  or Glycemic Index which maintains the glucose level and is of benefit to diabetics who need to manage their blood sugar levels.The amount of sugar which a woman should  consume per day is 22g,  so I could eat quite a few of these flapjacks. Hahaha 🙂

The fat content is low which makes these flapjacks a good option for reducing the risk of heart disease which combined with the oats in the recipe are very beneficial as they help to lower cholesterol in the fight against heart disease and they increase the fibre content and make you feel fuller for longer. You could increase the fibre content by using wholemeal flour in the recipe as I am sure the other ingredients would mask the taste of the flour.

I am planning on selling these through my webshop in a pack of 20. I will pack them in a plastic, hinged container which will be placed in a double corrugated cardboard box, surrounded in void fill (packaging foam), sealed and posted direst to your door through the Royal Mail 1st Class Signed For parcel service. I am still working on the price for these products so bear with me.

The other treat which I made yesterday is a Brownie Sandwich Bite. This consisted of brownie base, a cookie dough filling and a brownie topping which were all baked together in one tray. Once baked, the brownie was sliced into pieces before being smothered in chocolate ganache which I made using chocolate and water.  Then I added a few sprinkles as I knew my children would love them. This is an idea which I had swimming around in my head for weeks so it is nice to see that it worked. Looking at the ingredients I don’t think this is a healthy treat but would be a big hit at a party as an alternative to the standard shop bought treats you can buy.

As for the White Chocolate Scones, I haven’t had time to make them yet but I will. Maybe not today though, as I need to go and make my daughter’s birthday cake ready for tomorrow.
